Easy Peasy Chicken Sandwich

This sandwich, for all its power and glory and fantabulousness, is really very, very simple, and very, very easy to make. All you really need is: chicken, arugula, dijon mustard and ciabatta. Yep. That's it.

WHAT YOU NEED:

(Makes 1 serving)

1 skinless chicken breast

1 cup arugula, well rinsed

3 tbsp olive oil

1 tbsp of mirin (optional)

1/2 tbsp garlic and herb seasoning

1 generous tbsp of dijon mustard

1/2 tsp black pepper

A pinch of salt

1/2 loaf ciabatta bread, cut lengthwise

STEP ONE

Flatten the chicken breast out until it's about 1/4 inch thick. Then go ahead and place the chicken breast, 2 tbsp olive oil, lemon zest, garlic and herb seasoning, mirin, ground black pepper and salt in a bowl or a ziplock bag. Let it sit for 30 min - 2 hours.

STEP TWO

Heat the remaining oil in a large nonstick skillet over medium high heat. Remove chicken breast from marinade, and pan fry your chicken until it develops this gorgeous golden crust; then turn and cook until it gets that golden hue on the underside too. With that done, remove from the pan and keep warm.

STEP THREE

And now to make it look as pretty as it is delicious...Sandwich assembly time!

Spread that lovely dijon mustard on one slice of ciabatta; top with a pinch of salt and ground black pepper to taste, followed by your beautifully pan fried chicken breast, and then as much arugula as you'd like. Slather more mustard onto that other slice of ciabatta, place on top of your sandwich tower and et voila, you have yourself a gorgeous chicken sandwich. Enjoy!
