Heartwarming Carrot Soup

This creamy dreamy carrot soup is a wonderful way to enjoy that sad and lonely bag of carrots that have probably been sitting there at the bottom of your produce drawers for way too long. A tablespoon of fresh ginger will add a nice, throat-warming touch to this soup, making it perfect for those cold, wintry nights of fuzzy socks and blanket forts.
WHAT YOU NEED:
(Makes 4 servings)
3 cups medium carrots, peeled and chopped
1 1/2 cups chopped onion
2 tsp minced garlic
1 tbsp fresh ginger, peeled finely chopped
1 tsp grated lemon peel
1/2 stick butter
3 cups vegetable broth
4 tbsp plain yoghurt
STEP ONE:
Melt the butter in a large pot over medium-high heat. Once the butter's all gooey and smelling like instant hunger, add your onions and sauté for around 3 to 5 minutes. Then let's go ahead and add the ginger and garlic; and sauté that for another 2 minutes. Now for our VIP. Add the chopped carrots and the lemon peel; and sauté for about a minute.
STEP TWO:
Alright, now we're ready to add the vegetable broth. Bring that to a boil. then reduce the heat and cover, just partially, and let that soup simmer until the carrots are very tender. We're talking a melt in your mouth kinda texture. Give it about 20 minutes, and then let it cool some.
STEP THREE:
Onto pureeing the soup, and the tip here is to do it in batches if you're using a blender. Return the pureed soup to the pot. and season with salt and pepper. Bring the soup to a simmer, and feel free to add more stock if the texture's a little too thick for you. You're basically done at this point! Just serve it up in bowls, and top each serving with a pretty swirl of plain yoghurt. Ah.. warm soup.
