Mini Sourdough Pizza

This mini sourdough pizza recipe gives you the best of both worlds. One, a pizza taste that everyone loves, and two, a super easy weeknight meal that you can put together in minutes. So no worries, lazybums, I got you covered.
WHAT YOU NEED:
(Makes ~8 servings or 6, if you like your crust extra thick)
1 loaf sliced sourdough bread
2 cups tomato paste
2 cups mozzarella cheese
1 cup basil (or your favorite toppings!)
Italian seasoning
Salt and pepper
STEP ONE:
Preheat your oven to 400 degrees and line your baking pan with parchment paper. Or.. you could leave it as is. That's fine too.
STEP TWO:
Lay the sourdough slices on the pan and spread a generous amount of tomato paste on each slice. Add the basil and sprinkle a little Italian seasoning on each slice, along with salt and pepper to taste. Or you could swap out the basil and put a crap ton of pepperoni, that's cool too, no one's judging. You do you. Then finish off the slices with a healthy mound of mozzarella cheese on each one. (FYI, I say healthy, but I put a little mountain of cheese on each slice.)
STEP THREE:
Bake in the oven for 10-15 minutes or until the cheese is all gooey and melted and totally Instagram-worthy, and then bam, there you have it. Bread a la pizza?
